Bryan Avila, Co-Founder, CEO and teacher of Vintners Institute joins Sid Patel in an episode of The Wine, Whiskey and Weed Show to discuss the ins and outs of the winemaking industry.

As a formally trained enologist, seasoned commercial winemaker, ACUE Credentialed Educator and a freelance writer for Wine Business Monthly’s Trials section, Bryan brings to you key pointers to keep in mind when in the wine industry: 

1) Adapting to climate change challenges 

Virginia's frequent rainfall poses a challenge to winemakers, as it can lower the fruit sugar content and subsequently reduce the potential alcohol in the wine while the East Coast faces a lot of fires. 

To overcome such issues, winemakers need to implement different processes and techniques and need to sit with their winemaking team to find something that works for them. While these techniques are developing, it’s important to ensure that you have a good connection with the universities.

2) Managing to keep your soil healthy 

Bryan mentions that you need to manage your soil right to keep those vines healthy. He mentions the resilience of good wines is to that of a physically fit person, who would have a greater chance of survival if stranded in a desert compared to someone who is out of shape.

3) Challenges to logistics in bulk wine 

When you are looking for a particular flavor profile in a wine, you might purchase bulk wines from unknown vendors. He emphasized the importance of testing and tasting the wine before purchasing it to ensure that it meets the desired quality standards. Assessing the risk level is very important! 

4) What to do if any bulk wine issue pops up as the wine arrives? 

The winery needs to rely on its winemaker's toolbox. You can enhance the wine, directing its flavor profile in a specific desired direction. Add color, acidification, or de-acidify, and add touch-ups of oak to touch up the wine. 

5) What to add to your resume to show your proficiency in buying bulk wine?

Showcasing the price points you can afford, being quick about the transaction and providing instruction on how you want the tanker filled to add to your efficiency. 

6) Shifting from conventional to regenerative farming 

Byran suggests wineries start experimenting with different ways of farming. The shift is long-term as it might disturb the balance of your vineyard but adding regenerative farming is beneficial. “It is the wave of the future”, he says. It might take three years to see those changes as well!
